I spent years being treated like a guinea pig. I was passed from specialist to specialist – through allergy clinics, gastroenterology, neurology, and even psychiatry. I heard everything from 'it’s just anxiety' to 'it’s your stomach,' until they eventually settled on 'probably histamine intolerance.' I’ve poured hundreds of euros into medical tests, supplements, and 'safe' foods that led nowhere.
Fear of every bite and fatigue that robbed me of the energy I needed for my family and work. Today, I have a system that lets me eat without panic, my health is stable, and I finally feel like myself again.
My daily struggle with Histamine Intolerance included:
Constant digestive issues – diarrhoea, bloating, and cramps that forced me to constantly scout for the nearest toilet wherever I went.

What I discovered shocked me:
Undiagnosed Population: It is estimated that 1–3% of people suffer from Histamine Intolerance (HIT), but the vast majority are completely unaware because they have never been formally diagnosed.
The Freshness Factor: Histamine levels in food increase over time. The less fresh a food is, or the longer it has been stored, the higher the histamine content. This is a critical detail that most people simply overlook.
